Organic Ceylon cinnamon sticks — true cinnamon quills (Cinnamomum verum) for infusing, simmering and grinding fresh.

Ceylon quills are unmistakable: many papery layers of fine bark rolled into a delicate scroll, quite unlike cassia's single thick curl. The flavour follows suit — light, citrusy-sweet and fragrant rather than hot — and Ceylon is naturally very low in coumarin, making it the variety most daily cinnamon users settle on. Ceylon quills are thin, brittle and multi-layered with a delicate, citrusy-sweet flavour and naturally very low coumarin; cassia is a single thick bark curl — bolder, hotter and cheaper, with higher coumarin.
