Cassia is made from the dried inner bark of evergreen trees grown across Asia. Darker and redder than Ceylon, it brings a robust, warm-sweet flavour and a pungent aroma that stands up to long cooking and big bakes. It is the more affordable workhorse of the two cinnamons; note that cassia is naturally higher in coumarin than Ceylon, so heavy daily users often choose Ceylon instead. Certified organic.
