Cut from the bark of Cinnamomum verum in Sri Lanka — the island formerly called Ceylon — these quills are made of many fine, papery layers, quite different from cassia's single thick curl. The flavour is delicate, citrusy-sweet and fragrant, and Ceylon is naturally very low in coumarin, making it the everyday choice for regular cinnamon drinkers and bakers.
